Terroir

Maritime Canada’s French settlers, also known as Acadians, planted what are now known as some of North America’s first orchards. Apple seeds brought from the old world by European settlers grew into lush orchards in the heart of Nova Scotia, and 400 years later we continue to nurture this gift and benefit from the land.

Five uniquely delicious apple varieties grown right here in Nova Scotia come together in our recipe for Bulwark handcrafted cider.

Signature five-apple blend

Our signature blend of North American apple varieties includes Macintosh, Cortland, Russet, Honeycrisp and Northern Spy.

Freshly pressed and juiced onsite, every batch of Bulwark juice is slowly fermented one batch at a time. Adjustments can then be made batch by batch, as we look for a synergy of acids, tannins, and sweetness, to ensure we achieve a premium signature blend that’s true to our terroir.

Our cider reflects our values: natural ingredients, exceptional taste and outstanding craftsmanship.

Traditional cider making is an art form older than our country itself. Cider is, in a way, very simple to make – combining juiced apples with yeast causes fermentation to occur. Nevertheless, creating a balanced blend is highly complex. Just like wine, cider calls for quality fruit and sound winemaking skills to get great results.

Our award-winning craft ciders are made from 100% freshly pressed apple juice.

Cider begins and ends with the apple. Our quality fruits from the Annapolis Valley are juiced onsite and slowly fermented, resulting in a natural cider that’s never made from concentrate. The result is a premium balanced blend of sweetness, acid, and tannins that’s low in sugar, made from real apple juice, and bottled onsite.
