Our signature five-apple blend of Annapolis Valley apples surrounded by sweet, buttery caramel candy. Combined, they create a balanced, refreshing, crisp cider, great with a decadent dessert or to sip on its own.
Cox’s Orange Heritage Series
Bulwark Cox’s Orange cider is made with freshly pressed Annapolis Valley Cox’s Orange Pippin apples. This heirloom apple is one of the most highly regarded apple varieties for cider making. It’s slightly tart profile exquisitely balanced by sweet pear and citrus notes and a bright and crisp dry finish.
Golden Russet Heritage Series
Bulwark Golden Russet apple cider is a unique single varietal profile with a warm, complex flavour and a crisp, dry finish. It is distinctive in appearance and flavour with an amber-coloured russet skin and notes of honey, citrus and spice.
Ice Cider
Crafted using our signature five-apple blend, this limited release ice cider is medium-sweet and aromatic with a luscious body. The acidity balances the full-bodied nectar with notes of baked apples, cinnamon, and slight tropical fruit notes on the palate. Serve well chilled as an aperitif or digestif.
Oak Aged Heritage Series
This oak-aged cuvée spéciale cider is a celebration of the rich history of the area and its importance to the Nova Scotia apple industry. Our signature five-apple variety blend is aged for 23 months in oak barrels, resulting in a smooth earthy cider expressing warm notes of pear, vanilla and cloves.
People’s Cider
People’s Cider brings together apples from backyards and hobby farms across Nova Scotia, slowly fermented to produce a rustic cider expressing true terroir: apple blossom aromas, pear, clover and honey with a crisp, dry finish. A delight to drink, it also spreads good cheer in donating a portion of the proceeds to Feed Nova Scotia.
Raspberry
Bulwark Raspberry boasts pure, clean raspberry notes that perfectly complement our signature five-apple blend. The result is a crisp, off-dry style fruit cider that’s sure to add a zip to your summer. Pair this Bulwark seasonal cider with your favorite barbeque fare, straight off the grill.

Montmorency sour cherries complement the fruity flavours of our signature Annapolis Valley five-apple blend in this exciting, limited release cider. The combination of luscious tart cherries fermented separately prior to being blended with apple lay claim to an exceptionally full, wine-like cider.
